Nigerian Peper Soup

Ingredients

  • 1b mixed meat (chicken, beef, or fish)

  • 4 cups water

  • 2 tablespoons pepper soup seasoning

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 1 teaspoon ginger, grated

  • 1 scotch bonnet pepper, chopped (adjust to taste)

  • Handful of scent leaves or basil leaves, chopped

How to make

  1. Clean and cut the meat into bite-sized pieces. If using fish, clean and cut into large chunks.

  2. In a pot, combine the meat with water, pepper soup seasoning, onion, garlic, ginger, and scotch bonnet pepper. Bring to a boil.

  3. Reduce heat and simmer until the meat is tender (about 30-40 minutes for chicken or beef, and 10-15 minutes for fish).

  4. Add salt to taste and stir in the chopped leaves. Simmer for another 5 minutes.

  5. Serve hot, ideally during cold weather or as a comforting dish.

How to make

  1. Clean and cut the meat into bite-sized pieces. If using fish, clean and cut into large chunks.

  2. In a pot, combine the meat with water, pepper soup seasoning, onion, garlic, ginger, and scotch bonnet pepper. Bring to a boil.

  3. Reduce heat and simmer until the meat is tender (about 30-40 minutes for chicken or beef, and 10-15 minutes for fish).

  4. Rinse the rice under cold water until the water runs clear. Drain and set aside.

  5. Heat the oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.

Ingredients

  • 2 cups instant pounded yam flour

  • 4 cups water

How to make

  1. Bring the water to a boil in a large pot.

  2. Slowly add the pounded yam flour to the boiling water, stirring constantly to prevent lumps.

  3. Continue to stir until the mixture becomes smooth and stretchy.

  4. Cover the pot and cook for about 5 minutes on low heat. Serve warm.

Egusi Soup

Ingredients

  • 2 cups ground egusi (melon seeds)

  • 1/2 cup palm oil

  • 1 onion, finely chopped

  • 2 cups spinach or bitter leaf, chopped

  • 1 pound beef, cut into bite-sized pieces

  • 1 pound fish (like catfish or tilapia), cut into pieces

  • 2 tablespoons ground crayfish

  • 2 Maggi cubes (or bouillon cubes)

  • Salt and pepper to taste

  • 4 cups water

How to Make

  1. In a large pot, heat the palm oil over medium heat. Add the onions and cook until translucent.

  2. Add the beef and cook until browned.

  3. Add 4 cups of water to the pot and bring to a boil.

  4. Add the fish, crayfish, Maggi cubes, salt, and pepper. Cook for another 10 minutes.

  5. Stir in the ground egusi and reduce the heat. Simmer for 20 minutes, stirring frequently.

Salmon Fish

Ingredients

  • Tomatoes past or Tomato ketchup

  • Red bell pepper

  • Red onion

  • Corn, vegetable, and cooking oil

  • Paprika powder

  • Salt

  • 2 Curry powder

  • Water

How to Make

  1. At low heat put cooking oil in the pan.

  2. Add tomato or ketchup paste.

  3. Put chop red onion, red or green pepper,

  4. Add the fish, crayfish, Maggi cubes, salt, and pepper.

  5. Add curry powder, salt, garlic, thyme (basil), and cayenne pepper or paprika.

  6. Cooking for 10-15 minutes

  7. Stir in the spinach and cook for 5 more minutes.

  8. Boil for 5-10 minutes when it turns brown, it is ready to be eaten.
